Crab Salad With Grape Fruit and Mango

Ingredients:

9 slices Mango (slice thinly)
30 gram Crabmeat
19 gram Shallot (chopped)
2 slices Grape fruit flesh (cut into cubes)
20 gram Mayonnaise
1 gram Chilli (diced)
10 ml Lime juice
10 ml Olive oil
19 gram Frisee
19 gram Baby mache
19 gram Chive (sliced)
Salt to taste
Pepper to taste

Methods:

  1. Mix crabmeat, shallot, grape fruit flesh, mayonnaise, chilli, lime juice, olive oil, salt and pepper together.
  2. Place a stainless steel mould in the centre of the plate and arrange the slice mango by the side of the mould.
  3. Carefully put the mixed ingredients into the mould and slowly remove the mould.
  4. Arrange the frisee, baby mache and chive on top and place a bit mayonnaise on both side of the plate.
  5. Serve for one.
