Chicken Ragout

Ingredients:

1 Whole Chicken Breast
8 Cherry Tomatoes
100g Leeks
50g Onion
10g Garlic
100g Parmesan Cheese
100ml Heavy Cream
1 sprig Rosemary
Salt & Black Pepper to taste


Method:

  1. Cube the chicken and set aside. Half the cherry tomatoes and slice all the aromatics.
  2. In a hot pan, heat some olive oil and sear the cubed chicken until brown. Add in all the aromatics and cook for a further 5 minutes.
  3. Add the rosemary and deglaze with the cream. Season to taste.
  4. Grate parmesan cheese into the ragout and serve
